Sourdough Cinnamon Rolls and the Dream Behind Them

As a single mom, life is always full. Between working multiple jobs, managing a home, and homeschooling my 14-year-old ninth grader, there is rarely a quiet moment in the day. Somehow, in the middle of all the schedules, responsibilities, and busy seasons, sourdough has become my hobby, my creative outlet, and one of my greatest sources of pride and joy.

There is something special about feeding a starter, watching dough rise, and turning simple ingredients into something warm and beautiful for my family. Sourdough gives me a chance to slow down, even if only for a little while, and create something with my hands.

One of my favorite things to make is sourdough cinnamon rolls. They are soft, rich, fluffy, and full of comforting flavor. I love experimenting with different fillings and toppings, from classic cinnamon sugar to apple pie, maple pecan, and pumpkin spice.

One day, I dream of opening my own bakery. I would love to start milling my own flour, learn even more about the grains I use, and eventually find a commercial kitchen to rent from time to time so I can grow this dream little by little. For now, I am grateful to be learning, baking, and sharing my recipes from my own kitchen.

SOURDOUGH CINNAMON ROLLS

Bakery Batch — 12 Rolls Each


MASTER CINNAMON ROLL DOUGH

Ingredients

  • 250 g active sourdough starter
  • 500 g warm whole milk
  • 2 large eggs
  • 100 g granulated sugar
  • 113 g butter, softened
  • 15 g salt
  • 950–1,025 g all-purpose or bread flour

Method

  1. Mix the starter, milk, eggs, sugar, and softened butter.
  2. Add the salt and about 950 g of flour.
  3. Knead for 8–10 minutes, until the dough is smooth, stretchy, and slightly tacky.
  4. Add a little more flour only if needed.
  5. Cover and bulk ferment until puffy and about 50–75% larger, usually 4–7 hours.
  6. Roll the dough into an approximately 15 × 24-inch rectangle.
  7. Add your chosen filling.
  8. Roll tightly from the long side.
  9. Cut into 12 rolls.
  10. Place the rolls in a greased 9 × 13-inch pan or a similar-size baking dish.
  11. Proof until very soft and puffy, usually 2–4 hours.
  12. Optional: Pour ½–¾ cup of warm heavy cream over the proofed rolls before baking.
  13. Bake at 350°F for approximately 25–32 minutes.


CLASSIC CINNAMON ROLLS

Filling

  • 113 g softened butter
  • 225 g brown sugar
  • 2 tbsp cinnamon
  • ½ tsp vanilla
  • Pinch of salt

Mix into a thick paste and spread over the dough.

Cream Cheese Icing

  • 113 g cream cheese, softened
  • 57 g butter, softened
  • 225–250 g powdered sugar
  • 1 tsp vanilla
  • Pinch of salt
  • 2–3 tbsp heavy cream or milk

Beat until smooth and spread over the warm rolls.


APPLE PIE CINNAMON ROLLS

Apple Pie Filling

  • 4 medium apples, peeled and finely diced
  • 85 g butter
  • 150 g brown sugar
  • 1 tbsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1½ tbsp water
  • 1 tsp vanilla

Melt the butter in a skillet.

Add the apples, brown sugar, cinnamon, nutmeg, salt, and lemon juice.

Cook for 8–10 minutes, until the apples are tender.

Mix the cornstarch and water together, stir into the apples, and cook for 1–2 minutes, until thickened.

Stir in the vanilla and cool completely.

Cinnamon Layer

  • 113 g softened butter
  • 175 g brown sugar
  • 1½ tbsp cinnamon

Spread over the dough, then add the cooled apple filling.

Cream Cheese Icing

  • 113 g cream cheese
  • 57 g butter
  • 225–250 g powdered sugar
  • 1 tsp vanilla
  • 2–3 tbsp heavy cream or milk
  • Pinch of salt

Optional: Finish with a caramel drizzle.


MAPLE PECAN CINNAMON ROLLS

Filling

  • 113 g softened butter
  • 175 g brown sugar
  • 1½ tbsp cinnamon
  • 1 tsp maple extract, optional
  • 150 g chopped pecans
  • 60 g pure maple syrup

Mix the butter, brown sugar, cinnamon, and maple extract.

Spread over the dough.

Drizzle with maple syrup and sprinkle with pecans.

Optional Gooey Maple-Pecan Bottom

  • 85 g melted butter
  • 125 g brown sugar
  • 90 g pure maple syrup
  • 75 g chopped pecans
  • ¼ tsp salt

Mix together and spread in the bottom of the pan before adding the rolls.

Maple Cream Cheese Icing

  • 113 g cream cheese
  • 57 g butter
  • 200–225 g powdered sugar
  • 40 g pure maple syrup
  • ½–1 tsp maple extract, optional
  • ½ tsp vanilla
  • Pinch of salt
  • 1–2 tbsp heavy cream

Beat until smooth and spread over the warm rolls.


PUMPKIN CINNAMON ROLLS

Pumpkin Dough

Use this dough instead of the master dough:

  • 250 g active sourdough starter
  • 375 g warm whole milk
  • 250 g pumpkin purée
  • 2 large eggs
  • 100 g granulated sugar
  • 113 g softened butter
  • 15 g salt
  • 1 tbsp pumpkin pie spice
  • ½ tsp cinnamon
  • 950–1,050 g flour

Mix and knead for 8–10 minutes.

Bulk ferment until puffy and about 50–75% larger.

Pumpkin Cinnamon Filling

  • 113 g softened butter
  • 200 g brown sugar
  • 1½ tbsp cinnamon
  • 1 tbsp pumpkin pie spice
  • Pinch of salt

Mix into a paste and spread over the dough.

Brown Sugar Cream Cheese Icing

  • 113 g cream cheese
  • 57 g butter
  • 200 g powdered sugar
  • 38 g brown sugar
  • 1 tsp vanilla
  • ½ tsp cinnamon
  • 1½–2½ tbsp heavy cream
  • Pinch of salt

Beat until smooth and spread over the warm rolls.


BAKING NOTES

Bake: 350°F

Time: Approximately 25–32 minutes

Finished temperature: About 190°F in the center

Extra gooey option: Pour ½–¾ cup of warm heavy cream over 12 proofed rolls before baking.

Overnight option: Shape the rolls, cover, and refrigerate. Let them finish proofing until soft and puffy before baking the next day.

Yield: 12 large cinnamon rolls per recipe.
